I am an old Wishbone guy and have dabbled over the years with Gun Options, Double Slots, and so on, but have always believed that the Wishbone offers the best way to run the Triple Option and Counters (counters are a must in the option game).
Why has the Gun and Multiple Formations become so popular in an attempt to run the Triple Option?
Emory Bellard always said--"if you have a 4 quick receivers formation, that type of formation is more conducive to throwing the ball."
A lot of coaches make the comment, I am going to spread them out to run the ball. The defense can always put more people in the box then you can handle. So, if you're going to spread out the defense, and they overload the box, you must be able to throw the ball successfully.
Just some thoughts!

I think the main reason for going to the gun is the increased ability to pass effectively. More specifically the formation makes it easier on the quarterback to pass.
A reason Tony Demeo gives for going to the gun, was that by putting the QB in gun, they were able to pick up certain stunts in obvious passing situations.
For those people who want more balance, the formation seems to help this as well.

We're an I-option team that recently moved to the pistol to get defenders out of the box. It worked when our passing game & protection was on point otherwise they still packed the box.
